Coffee Cake

Easy Coffee Cake – A delicious all-in-one coffee sponge topped with smooth coffee buttercream. Simple to make and packed full of flavor.

I had made this for my beloved aunt when she was leaving Saudi Arabia ,it was one of my best cakes ever.


LET'S GET STARTED


  • Ingredients

  1. 3 tbsp instant coffee powder

  2. 1¼ cups plain flour

  3. 2½ tsp baking powder

  4. 1 cup + 1 tbsp soft light brown sugar

  5. 1 cup or butter - soft at room temperature

  6. 4 eggs

  7. 2 tsp milk

  8. ⅛ tsp salt

  • Direction

  1. Preheat your oven to 160ºC /140ºC fan.then grease any shape of pan you like .

  2. Swift the dry Ingredients in a bowl and Whisk the wet ingredients then combine.

  3. Put the mixture in the cake pan bake for 30-35 minutes until a skewer inserted in the center comes out clean.

  4. Then let the cake pan to cool in the tins for about 10 minutes before removing them from the tins and moving them to a wire rack to cool completely.

  5. while waiting for cake to cool down lets make the coffee buttercream.

  • Ingredients for coffee buttercream

  1. ¾ cup + 2 tbsp butter - soft at room temperature

  2. 2¾ cups icing sugar

  3. ¼ tsp vanilla extract

  4. A little milk

  5. 2 tsp instant coffee powder

  6. 4 tsp boiling water

  • Direction for coffee buttercream

  1. Start by mixing together the instant coffee powder with the boiling water . Set aside to cool.

  2. In a large bowl mix the butter and vanilla extract until soft. Add the icing sugar and mix until combined with the butter and smooth. 

  3. Gradually add the coffee mixture, 1 tsp at a time. After each addition mix the buttercream until the coffee has been fully combined before adding more.

  4. Check the consistency of your buttercream. It should be soft enough that you could spread it onto a slice of bread. If it is too firm, then add a little milk (no more than 1 tsp at a time) until it is your desired consistency.

  5. Decorate the cake however you want

  6. Enjoy
